Description: Hi Guys! If you're trying to think of ways to eat better or change things up for the new year, here are some of my favorite meals lately. Chocolate Peanut Butter Overnight Oats 1 tablespoon chia seeds 1 tablespoon cocoa powder pinch cinnamon 2 teaspoons maple syrup 1/2 cup yogurt 1/2 cup milk 1/2 cup rolled oats In a bowl, combine the chia seeds, cocoa powder, cinnamon, maple syrup, and yogurt. Mix well and then add the milk and rolled oats. Mix again and leave in a bowl, cover, leave in fridge overnight. If you want it to soak faster, use quick oats and soak for at least 2 hours. In the morning, you can add strawberries, peanut butter, or your favorite toppings. Rice bowl in a roll Miso mayo sauce 1 tablespoon red miso paste 1 tablespoon soy sauce 2 tablespoons mayo 2 teaspoons minced ginger 2 teaspoons sugar 1 teaspoon rice vinegar In a bowl, combine the ingredients into the bowl and mix. Set aside. To make the roll, add a sheet of nori / seaweed, add white rice and flatten it out. Add the miso sauce, your favorite protein - salmon, chicken, tofu, beef, whatever you want. Add some greens, cabbage, carrots, whatever veggies you have and roll it up. Sausage and Mushroom creamy pasta 1 tablespoon olive oil 4-5 garlic cloves, minced 1/2 lb italian sausage, casing removed 1 cup sliced mushrooms 1/2 cup mushrooms 1/4 cup chicken broth 1 cup mascarpone cheese 1 cup arugula 8 oz pasta, cooked Cook the pasta according to the package's directions but under cook it by 1 minute. Drain, save some pasta water, and set aside. In a large pan, add olive oil and add the garlic. Next, saute the sausage and break it up into small crumbly pieces. Once it starts to brown, add the mushrooms and continue cooking for a few minutes. Deglaze the pot with some chicken broth and add the mascarpone cheese. Add the cooked poasta and close the lid for a few minutes. Halfway through just stir it up and let it continue cooking. If it's not looking super creamy, add a little bit of the pasta water. Turn off the heat and add more parmesan cheese and arugula. Mix and serve. Be sure to tag me on Instagram at @Honeysuckle if you make any of these recipes!!
